Main Ingredients
  • 1 lb fresh shrimp, peeled and deveined Use high-quality fresh shrimp for the best flavor.
  • 1 cup mashed potatoes Use creamy mashed potatoes; avoid overly watery ones.
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons flour
  • 2 tablespoons fresh parsley, chopped
  • 1 large egg, beaten For coating.
  • Bread crumbs for coating
  • Salt and pepper to taste
  • Oil for frying Ensure oil is hot enough before frying.

Method
 

Preparation
  1. Begin by boiling the shrimp in salted water until pink and cooked through. Drain, chop them finely, and set aside.
  2. In a skillet over medium heat, add a splash of oil. Sauté the chopped onion and garlic until soft and fragrant, about 3-4 minutes.
  3. In a bowl, combine the mashed potatoes, chopped shrimp, sautéed onion and garlic, flour, parsley, salt, and pepper. Mix until well combined.
  4. Take a handful of the mixture and form small oval or round shapes, about 2 inches long. Repeat until you’ve used up all the mixture.
  5. Dip each croquette in the beaten egg, and then roll in the breadcrumbs until fully coated.
Cooking
  1. In a large pot, heat oil over medium-high heat. Carefully add croquettes in batches, frying until golden brown on all sides, approximately 4-5 minutes.
  2. Remove croquettes from the oil and place them on paper towels to absorb excess oil. Serve warm with dipping sauces!

Notes

To elevate your dining experience, serve with a creamy garlic or spicy aioli dipping sauce and a side of mixed greens drizzled with balsamic vinaigrette.
