Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat until creamy and well-combined.
- Mix in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Add the vanilla extract and mix until smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the creamed butter mixture, mixing until just combined.
- Gently fold in the crumbled Pop Tarts.
- Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.
Baking
- Spread the dough evenly in the prepared pan.
- Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
- Allow the cookie bars to cool completely. If desired, frost with icing before serving.
Notes
For a softer cookie, aim for the lower end of the baking time. Experiment with different flavors of Pop Tarts. Store in an airtight container for up to 5 days or freeze for up to 3 months.
