Ingredients
  

For the Cookie Base
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Pop Tarts, crumbled
For Topping (Optional)
  • Frosting for topping Optional, can be skipped.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat until creamy and well-combined.
  3. Mix in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Add the vanilla extract and mix until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the creamed butter mixture, mixing until just combined.
  5. Gently fold in the crumbled Pop Tarts.
  6. Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.
Baking
  1. Spread the dough evenly in the prepared pan.
  2. Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
  3. Allow the cookie bars to cool completely. If desired, frost with icing before serving.

Notes

For a softer cookie, aim for the lower end of the baking time. Experiment with different flavors of Pop Tarts. Store in an airtight container for up to 5 days or freeze for up to 3 months.
