Preparation
- Preheat your oven to 375°F (190°C).
- Grease a muffin tin with cooking spray or brush with a little olive oil to prevent sticking.
- On a lightly floured surface, roll out your pizza dough until it's about 1/4 inch thick.
- Use a round cutter to cut out circles of dough—about 3 inches in diameter. Re-roll any scraps as necessary.
- Place each dough circle into the muffin tin, pressing gently against the sides so that it forms a little cup.
- Spoon a bit of pizza sauce into each cup, followed by a sprinkle of mozzarella cheese, Halal pepperoni slices, diced bell peppers, a dash of Italian seasoning, and then top it off with a sprinkle of Parmesan cheese.
- Using remaining dough, cut out more circles to cover the tops of each filled muffin cup.
- Lightly brush the tops with olive oil to ensure a golden finish.
Baking
- Place the muffin tin in the preheated oven and bake for 15-20 minutes or until the tops are golden brown and the cheese is bubbling.
- Once done, take out the pizza cupcakes and let them cool for a couple of minutes before serving. Enjoy!
Notes
For a vegetarian option, simply omit the Halal meat and load up on more veggies. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for about 2 months.
