Ingredients
  

For the cupcakes
  • 1 package pizza dough Store-bought or homemade.
  • 1 cup pizza sauce
  • 1 cup shredded mozzarella cheese Can substitute with other cheeses.
  • 1/2 cup Halal pepperoni slices Or any Halal-friendly meat.
  • 1/2 cup bell peppers, diced Can use any color of bell peppers.
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese
  • None Olive oil for brushing For a golden finish.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Grease a muffin tin with cooking spray or brush with a little olive oil to prevent sticking.
  3. On a lightly floured surface, roll out your pizza dough until it's about 1/4 inch thick.
  4. Use a round cutter to cut out circles of dough—about 3 inches in diameter. Re-roll any scraps as necessary.
  5. Place each dough circle into the muffin tin, pressing gently against the sides so that it forms a little cup.
  6. Spoon a bit of pizza sauce into each cup, followed by a sprinkle of mozzarella cheese, Halal pepperoni slices, diced bell peppers, a dash of Italian seasoning, and then top it off with a sprinkle of Parmesan cheese.
  7. Using remaining dough, cut out more circles to cover the tops of each filled muffin cup.
  8. Lightly brush the tops with olive oil to ensure a golden finish.
Baking
  1. Place the muffin tin in the preheated oven and bake for 15-20 minutes or until the tops are golden brown and the cheese is bubbling.
  2. Once done, take out the pizza cupcakes and let them cool for a couple of minutes before serving. Enjoy!

Notes

For a vegetarian option, simply omit the Halal meat and load up on more veggies. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for about 2 months.
