Dough Ingredients
  • 2 cups all-purpose flour (plus extra for dusting)
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 teaspoon active dry yeast
  • ¾ cup warm water Should be warm to activate yeast.
  • 1 tablespoon olive oil

Method
 

Preparation
  1. In a small bowl, combine warm water, sugar, and yeast. Stir lightly and let it sit for 5 to 10 minutes or until it becomes frothy.
  2. In a large mixing bowl, combine the flour and salt.
  3. Once the yeast is activated, pour it into the flour mixture along with the olive oil.
  4. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
  6. Punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball, then flatten each ball into a disc about ¼ inch thick.
  7. Cover the discs with a towel and let them rest for about 30 minutes.
  8. Preheat your oven to 475°F (245°C) and place a baking stone or inverted baking sheet inside.
  9. Carefully transfer the discs onto the hot baking stone and bake for about 5-7 minutes, or until they puff up and get lightly golden.
  10. Remove from the oven and let them cool slightly before enjoying!

Notes

Store leftover pitas in an airtight container at room temperature for up to 2 days, in the refrigerator for up to a week, or freeze for up to 3 months. Reheat in a damp paper towel in the microwave or in a skillet over low heat.
