Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the pistachio pudding mix, flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined. Be careful not to over-mix.
- If using, fold in the white chocolate chips.
Baking
- Scoop the dough onto a greased or lined baking sheet, leaving space for spreading.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
- Let cool on the baking sheet for about 5 minutes before transferring to a wire rack.
Notes
For a less sweet cookie, reduce the granulated sugar slightly. Consider adding crushed pistachios or swapping white chocolate chips for dark chocolate for flavor variations. Timing is key; don't overbake as cookies will continue to cook while cooling.
