  • 1 package (3.4 oz) pistachio pudding mix Ensure it aligns with Halal requirements.
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
Dry Ingredients
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Optional Ingredients
  • 1 cup white chocolate chips Optional for extra sweetness.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  3. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the pistachio pudding mix, flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined. Be careful not to over-mix.
  6. If using, fold in the white chocolate chips.
Baking
  1. Scoop the dough onto a greased or lined baking sheet, leaving space for spreading.
  2. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
  3. Let cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

For a less sweet cookie, reduce the granulated sugar slightly. Consider adding crushed pistachios or swapping white chocolate chips for dark chocolate for flavor variations. Timing is key; don't overbake as cookies will continue to cook while cooling.
