Preparation
- Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
- Incorporate the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring just until combined.
- Gently fold in the chocolate chips and pistachio cream until evenly distributed throughout the dough.
- Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, leaving space between each cookie.
Baking
- Bake for 10-12 minutes, or until the edges are lightly golden. The centers might look a bit soft, which is perfect!
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
