  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed Use light or dark brown sugar
  • 2 large eggs At room temperature
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1/2 cup pistachio cream Can be store-bought or homemade
  • 1/2 cup chopped pistachios Optional for added texture

Preparation
  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  3. Incorporate the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring just until combined.
  5. Gently fold in the chocolate chips and pistachio cream until evenly distributed throughout the dough.
  6. Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, leaving space between each cookie.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden. The centers might look a bit soft, which is perfect!
  2. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For thicker cookies, consider chilling the dough for 30 minutes before baking. Enjoy with a glass of milk or a scoop of vanilla ice cream for a delightful treat.
