Wet ingredients
  • 3 pieces ripe bananas, mashed The riper, the better!
  • 1/3 cup melted butter
  • 1 tsp vanilla extract
  • 1/2 cup sugar Can be adjusted based on your sweetness preference
  • Pinch of salt
Dry ingredients
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon (optional) For added warmth
Add-ins
  • 1/2 cup chopped pistachios

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan by greasing it lightly.
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Add the melted butter to the mashed bananas and mix well. Then incorporate sugar, vanilla extract, and a pinch of salt.
  4. In a separate bowl, mix the flour, baking soda, and optional cinnamon.
  5. Gradually fold the dry mixture into the wet ingredients, mixing just until combined.
  6. Gently fold in the chopped pistachios until evenly distributed.
Baking
  1. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack. Allow it to cool fully before slicing.

Notes

Serve with honey, cream cheese frosting, or vanilla ice cream. Be careful not to overmix for a moist texture. Adjust sugar to taste.
