Preparation
- Preheat the oven to 350°F (175°C) and prepare a loaf pan by greasing it lightly.
- In a large mixing bowl, mash the ripe bananas with a fork until smooth.
- Add the melted butter to the mashed bananas and mix well. Then incorporate sugar, vanilla extract, and a pinch of salt.
- In a separate bowl, mix the flour, baking soda, and optional cinnamon.
- Gradually fold the dry mixture into the wet ingredients, mixing just until combined.
- Gently fold in the chopped pistachios until evenly distributed.
Baking
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack. Allow it to cool fully before slicing.
Notes
Serve with honey, cream cheese frosting, or vanilla ice cream. Be careful not to overmix for a moist texture. Adjust sugar to taste.
