Base Ingredients
  • 1 cup cooked brown rice Cook according to package instructions.
Main Ingredients
  • 1 can black beans, rinsed and drained 15 oz can
  • 1 cup corn Fresh, frozen, or canned is fine.
  • 1 cup diced tomatoes
  • 1 avocado sliced
  • 1 cup shredded cheese Cheddar or Mexican blend.
  • 1/2 cup diced red onion
  • 1/2 cup chopped cilantro
  • 2 limes, juiced
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Cooking
  1. Start by cooking the brown rice according to package instructions. This will be the base of your burrito bowl, so make sure it’s perfectly fluffy!
  2. While the rice cooks, prepare your fresh ingredients. Dice the tomatoes, slice the avocado, and chop the cilantro. You want everything to be ready for assembly!
  3. In a large mixing bowl, combine the black beans, corn, tomatoes, red onion, and lime juice. Sprinkle in the chili powder, salt, and pepper, and mix it well for a burst of flavor!
  4. In bowls, add a generous scoop of the cooked brown rice as the base. Top it off with the bean mixture and layer on your desired cheese, avocado slices, and cilantro.
  5. Dig in and savor each mouthful of your colorful and nutritious burrito bowl. You can also add your favorite hot sauce for an extra kick!

Notes

Feel free to switch out any ingredients based on what you have at home. Avoid making the rice soggy by keeping toppings separate until serving. Leftovers can be stored in an airtight container for up to 3 days.
