Ingredients
  

For the pie
  • 1 pre-made graham cracker pie crust Store-bought for convenience
  • 1 cup cream cheese Softened to room temperature
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy whipping cream
  • 1 1/2 cups mixed berries (strawberries, blueberries, raspberries) Fresh berries preferred
  • optional fresh mint for garnishing For added color and flavor

Method
 

Preparation
  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Gradually add in the powdered sugar and continue to mix until well combined.
  3. Stir in the vanilla extract for additional flavor.
  4. In a separate bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold this whipped cream into the cream cheese mixture until thoroughly combined.
  6. Gently fold in the mixed berries, reserving a few for garnish.
  7. Spoon the creamy berry mixture into the pre-made graham cracker crust, smoothing the top for an even finish.
  8. Place the pie in the refrigerator for at least 4 hours (or overnight) to let it set properly.
  9. Once chilled, slice your Pink Berry Cream Cheese Pie and garnish with the reserved berries and fresh mint leaves if desired.

Notes

Make sure the cream cheese is at room temperature for easier blending. Use fresh, ripe berries for the best flavor.
