Ingredients
  

For the marinade
  • ¼ cup soy sauce (ensure it’s halal-certified)
  • 3 cloves garlic (minced)
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 1 tablespoon olive oil
  • 1 teaspoon ground ginger (or fresh ginger, grated)
  • Salt and pepper (to taste)
For the skewers
  • 1 ½ lbs boneless, skinless chicken thighs (cut into bite-sized pieces)
  • 1 cup fresh pineapple chunks (about half a pineapple)
  • Wooden or metal skewers (if using wooden, soak them in water for 30 minutes before grilling)

Method
 

Marinate the Chicken
  1. In a large bowl, mix soy sauce, minced garlic, honey, olive oil, ginger, salt, and pepper. Add the chicken pieces and stir to coat. Cover and marinate for at least 30 minutes, up to overnight in the refrigerator for deeper flavor.
Prepare the Skewers
  1. While the chicken is marinating, soak wooden skewers in water (if using) and cut fresh pineapple into bite-sized chunks.
Assemble the Skewers
  1. Once the chicken has marinated, thread the chicken pieces and pineapple chunks onto the skewers, alternating between the two for a balanced taste.
Preheat the Grill
  1. Preheat your grill over medium-high heat. Lightly oil the grates before adding the skewers to prevent sticking.
Grill the Skewers
  1. Place the skewers on the grill and cook for about 15-20 minutes, turning occasionally until the chicken is cooked through (internal temperature should reach 165°F) and nicely charred.
Serve
  1. Remove the skewers from the grill, let them rest for a couple of minutes, then serve immediately. Feel free to garnish with chopped green onions or sesame seeds!

Notes

If chicken isn’t your thing, try substituting with cubed firm tofu or beef. Be mindful of grilling time; too long can make the chicken dry. Stir the marinade well before adding chicken for even flavor distribution.
