Ingredients
  

For the Fritters
  • 1 whole ripe pineapple, peeled and cut into bite-size chunks
  • 1 cup all-purpose flour
  • 1 cup sparkling water or a blend of water and baking soda for extra fluffiness
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • A pinch of salt
  • Vegetable oil for frying

Preparation
  1. Start by peeling the pineapple and slicing it into bite-sized chunks. Set these aside while you mix the batter.
Making the Batter
  1. In a large bowl, combine the all-purpose flour, sugar, baking powder, and a pinch of salt. Slowly pour in the sparkling water, whisking until you achieve a smooth and slightly thick batter.
Frying
  1. In a deep frying pan, heat about 2 inches of vegetable oil to 350°F (175°C). You can test if it’s hot enough by dropping a small amount of batter into the oil; it should sizzle and rise to the surface.
  2. Dip each pineapple chunk into the batter, ensuring it’s completely coated. Carefully drop it into the hot oil, frying a few at a time. Fry until golden brown and crispy, about 3-4 minutes per batch.
Serving
  1. Use a slotted spoon to remove the fritters from the oil, placing them on a paper towel-lined plate to absorb excess oil. Dust with powdered sugar before serving, if desired!

Notes

Leftover fritters can be stored in an airtight container in the refrigerator for up to two days. For best results, reheat in a preheated oven at 350°F (175°C) for about 10 minutes.
