Ingredients
  

Main ingredients
  • 2 cups fresh diced pineapple Ripe is best for sweetness
  • 1 small red onion, finely chopped Adds a lovely crunch
  • 1 medium jalapeño pepper, seeded and minced Adjust heat to taste
  • 2 tablespoons fresh cilantro, chopped Optional, but highly recommended
  • 1 tablespoon lime juice For that refreshing zing
  • 1-2 pieces chipotle peppers in adobo sauce, minced Adjust based on heat preference
  • Salt, to taste Elevates all flavors

Method
 

Preparation
  1. Start by peeling and dicing your fresh pineapple into small, bite-sized pieces. The riper, the better!
  2. Finely chop the red onion and seed/mince the jalapeño. If you’re using cilantro, give that a good chop too.
Combining Ingredients
  1. In a large mixing bowl, combine the diced pineapple, chopped onion, minced jalapeño, and cilantro (if using).
Flavoring
  1. Squeeze lime juice over your mixture, then add the minced chipotle peppers.
Seasoning
  1. Sprinkle a pinch of salt over the mixture to enhance the flavors. Adjust the salt and lime juice to suit your taste.
Mixing & Chilling
  1. Gently stir the ingredients until everything is well combined. Cover the bowl and refrigerate for at least 30 minutes before serving.

Notes

To avoid having your salsa too spicy, start with a small amount of chipotle pepper and adjust as desired. For best flavor, let it chill for at least 30 minutes before serving. Can be stored in an airtight container in the refrigerator for up to three days.
