  • 1 lb boneless, skinless chicken breast, diced
  • 1 cup fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Method
 

Preparation
  1. Begin by dicing the chicken, and slicing the bell peppers. Mince the garlic and ginger, and get the fresh pineapple chunks ready.
Cooking
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat until hot.
  2. Add the diced chicken to the skillet, seasoning it with salt and pepper. Stir-fry for about 5-7 minutes or until the chicken is golden brown and cooked through.
  3. Toss in the minced garlic, ginger, and sliced bell peppers. Cook for an additional 3-4 minutes until the vegetables are slightly tender.
  4. Stir in the fresh pineapple and soy sauce. Cook for another 2-3 minutes, allowing the flavors to meld and the pineapple to caramelize slightly.
  5. Remove from heat, sprinkle sesame seeds on top if desired, and serve hot with rice or noodles.

Notes

For added flavor, consider marinating the chicken in soy sauce and ginger before cooking. Store leftovers in an airtight container in the fridge for up to 3 days.
