Dry Ingredients
  • 2 cups all-purpose flour Make sure all your ingredients are Halal-compliant.
  • 1 cup sugar Can be substituted with coconut sugar for a different flavor.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup butter, softened Ensure it's at room temperature for a smoother batter.
  • 2 large eggs Make sure they are at room temperature.
  • 1 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the all-purpose flour, sugar, baking soda, and salt until well combined.
  3. In another bowl, beat the softened butter until creamy, then gradually add the sugar until the mixture is light and fluffy.
  4. Incorporate the eggs one at a time, mixing well after each addition. Add in the vanilla extract and stir until combined.
  5. Gradually pour the dry ingredients into the butter mixture, alternating with the crushed pineapple. Mix just until combined; it’s okay if there are a few lumps.
  6. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Once baked, allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  2. Slice and enjoy! Serve plain or with toppings like whipped cream, honey, or ice cream.

Notes

Store leftovers at room temperature for up to 2 days, or in the refrigerator for up to a week. For longer storage, freeze slices wrapped in plastic wrap for up to 3 months.
