Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, whisk together the all-purpose flour, sugar, baking soda, and salt until well combined.
- In another bowl, beat the softened butter until creamy, then gradually add the sugar until the mixture is light and fluffy.
- Incorporate the eggs one at a time, mixing well after each addition. Add in the vanilla extract and stir until combined.
- Gradually pour the dry ingredients into the butter mixture, alternating with the crushed pineapple. Mix just until combined; it’s okay if there are a few lumps.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Serving
- Once baked, allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Slice and enjoy! Serve plain or with toppings like whipped cream, honey, or ice cream.
