Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
For the filling
  • 1 cup crushed pineapple, drained
  • 2 large eggs
  • 1/2 cup granulated sugar (for the filling)
  • 1 tsp vanilla extract
  • 1/4 cup shredded coconut (optional) For added texture and flavor
For serving
  • to taste Powdered sugar For dusting before serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a medium bowl, blend the melted butter, flour, and 1/4 cup of sugar until it forms a crumbly mixture. Press this evenly into the bottom of your prepared baking pan.
  3. Bake for 10–12 minutes or until lightly golden.
Filling
  1. In another bowl, whisk together the eggs, 1/2 cup of sugar, crushed pineapple, and vanilla extract until smooth.
  2. If desired, fold in shredded coconut for extra texture and flavor.
Baking
  1. Pour the pineapple mixture over the baked crust.
  2. Return to the oven and bake for an additional 20–25 minutes, until the filling is set and the edges are lightly browned.
Serving
  1. Allow the bars to cool completely in the pan before cutting them into squares.
  2. Dust with powdered sugar before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. They freeze beautifully for up to 2 months.
