Ingredients
  

Main Ingredients
  • 2 cups cassava (grated) Ensure cassava is finely grated for best texture.
  • 1 cup sugar
  • 1 cup water
  • 1 tablespoon lye water Use in moderation for desired consistency.
  • 1 teaspoon vanilla extract (optional) For added flavor.
Coating
  • Shredded cheese For coating.
  • Grated coconut For coating.

Method
 

Preparation
  1. In a mixing bowl, combine the grated cassava, sugar, water, lye water, and vanilla extract (if using). Stir until well mixed.
  2. Grease your mold or baking pan to prevent sticking.
  3. Pour the mixture into the greased mold, smoothing out the top.
Cooking
  1. Steam over medium heat for 30-40 minutes, or until firm and cooked through. A toothpick should come out clean when it’s ready.
  2. Once done, allow it to cool for a bit before slicing it into cubes.
Serving
  1. Coat each piece with either grated coconut or shredded cheese before serving. Enjoy these delightful bites!

Notes

Pichi-Pichi can be stored in an airtight container at room temperature for about two days, or refrigerated for up to a week. If you have leftovers, you can freeze them for later enjoyment. To reheat, simply steam them briefly to restore their soft texture.
