Ingredients
  

For the Salmon
  • 2 fillets Salmon Fillets Fresh or thawed
  • 2 tbsp Olive Oil For searing
  • to taste Salt For seasoning
  • to taste Black Pepper For seasoning
  • 1 tsp Garlic Powder For seasoning
For the Mashed Cauliflower
  • 1 medium Cauliflower, cut into florets Fresh
  • 2 tbsp Butter For flavor
For the Green Beans
  • 200 g Green Beans, trimmed Fresh or frozen
  • 1 tbsp Lemon Juice For flavor

Method
 

Preparation
  1. Begin by boiling water in a pot.
  2. Add the cauliflower florets and cook for about 10-12 minutes, or until they are tender. Drain and set aside.
Cooking
  1. In the same pot, add the green beans and cook for about 5 minutes until they are bright green and crisp-tender. Drain and set aside.
  2. In a mixing bowl, add the boiled cauliflower and mash it using a potato masher or a fork. Stir in 1 tablespoon of butter, salt, and pepper to taste until smooth and creamy.
  3. Heat olive oil in a non-stick skillet over medium-high heat. Season the salmon fillets with salt, black pepper, and garlic powder.
  4. Place the fillets skin-side down in the skillet and cook for about 4-5 minutes. Flip and cook for an additional 3-4 minutes until the salmon is opaque throughout.
  5. In the same skillet, add the cooked green beans, remaining butter, and a squeeze of lemon juice. Toss to combine and heat through.
Serving
  1. Plate the mashed cauliflower, top with seared salmon, and add the green beans on the side. Enjoy your delightful meal!

Notes

For ingredient substitutions, swap out green beans with asparagus or broccoli. Avoid overcooking the salmon to maintain moisture.
