Ingredients
  

For the Cobbler
  • 2 cups fresh strawberries, hulled and sliced Use frozen strawberries if fresh are not available, but ensure they are thawed and drained.
  • 8 oz cream cheese, softened Ensure cream cheese is at room temperature for easier mixing.
  • 1 cup sugar Divided into 1/4 cup for strawberries and 3/4 cup for the cream cheese mixture.
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup butter, melted Melted butter to be mixed with wet ingredients.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, add sliced strawberries and sprinkle 1/4 cup of sugar over them. Mix gently and let sit.
  3. In another bowl, beat the softened cream cheese until smooth. Gradually add in the remaining 3/4 cup of sugar and mix well.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. In another bowl, mix the milk, vanilla extract, and melted butter.
  6. Add the wet mixture to the dry ingredients and stir until just combined.
Baking
  1. Pour half the batter into a greased 8×8-inch baking dish.
  2. Spread the strawberries evenly over the batter, then pour the remaining batter on top.
  3. Bake for about 30 minutes, or until golden brown and a toothpick inserted comes out clean.
  4. Let cool for a few minutes before serving.

Notes

Store in an airtight container in the refrigerator for 3-4 days, or freeze for up to 2 months. Reheat in the oven at 350°F until warmed through.
