Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, add sliced strawberries and sprinkle 1/4 cup of sugar over them. Mix gently and let sit.
- In another bowl, beat the softened cream cheese until smooth. Gradually add in the remaining 3/4 cup of sugar and mix well.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- In another bowl, mix the milk, vanilla extract, and melted butter.
- Add the wet mixture to the dry ingredients and stir until just combined.
Baking
- Pour half the batter into a greased 8×8-inch baking dish.
- Spread the strawberries evenly over the batter, then pour the remaining batter on top.
- Bake for about 30 minutes, or until golden brown and a toothpick inserted comes out clean.
- Let cool for a few minutes before serving.
Notes
Store in an airtight container in the refrigerator for 3-4 days, or freeze for up to 2 months. Reheat in the oven at 350°F until warmed through.
