  • 2 cups rhubarb, chopped Fresh rhubarb, cut into 1-inch pieces
  • 2 cups sugar Granulated sugar
  • 1/4 cup water
  • 1 tablespoon lemon juice Freshly squeezed works best
  • 1 packet fruit pectin For jamming consistency

Preparation
  1. Begin by washing and chopping your rhubarb into small pieces (about 1-inch chunks).
  2. In a large pot, combine the chopped rhubarb, sugar, water, and lemon juice. Stir gently to mix everything.
  3. Sprinkle the packet of fruit pectin into the mixture, stirring well to eliminate any lumps.
Cooking
  1. Bring the mixture to a gentle boil over medium heat, stirring frequently.
  2. Allow it to boil for about 10 minutes or until the rhubarb breaks down and the mixture thickens.
  3. Perform the 'spoon test' to check the consistency.
Jarring
  1. Pour the hot jam into sterilized jars and seal tightly. Allow the jars to cool completely at room temperature.
Enjoy
  1. This delightful jam can be enjoyed right away or stored in the fridge for later!

Notes

For variations, try using natural sweeteners like honey or maple syrup in place of sugar. Be mindful of adjusting pectin amounts accordingly.
