Preparation
- In a mixing bowl, whisk together the olive oil, lemon juice, minced garlic, honey, smoked paprika, cayenne pepper, salt, and pepper.
- Add the peeled and deveined jumbo shrimp to the bowl, tossing them in the marinade until they are evenly coated. Cover and refrigerate for 30 minutes.
- While the shrimp is marinating, preheat your grill to medium-high heat.
- Thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning).
Cooking
- Place the skewers on the grill and cook for about 2-3 minutes on each side, until the shrimp turn pink and opaque.
- Remove from the grill, drizzle with a bit of extra lemon juice if desired, and enjoy your perfect grilled jumbo shrimp!
Notes
Don't overcook the shrimp to prevent them from becoming rubbery. For a deeper flavor, marinate the shrimp for up to an hour or more if time permits. Adjust the spice level according to your preference.
