  • 4 pieces boneless, skinless chicken breasts Ensure chicken is thawed for even cooking.
  • 1 pound baby potatoes, halved Wash and halve for maximum flavor absorption.
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese Can substitute with Pecorino Romano.
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • as needed Fresh parsley for garnish

Preparation
  1. Start by washing the baby potatoes and cutting them in half. Mince the garlic and set aside.
Cooking
  1. Place the halved potatoes at the bottom of your crockpot. Next, add the chicken breasts on top of the potatoes.
  2. In a bowl, mix together the chicken broth, minced garlic, grated Parmesan cheese, Italian seasoning, salt, and pepper. Pour this flavorful mixture over the chicken and potatoes.
  3. Turn your crockpot on to low heat and cover it. Let it cook for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and cooked through.
  4. Once cooked, garnish with freshly chopped parsley before serving. Enjoy with your favorite side dishes or salad!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat in the microwave or on stovetop with a splash of chicken broth.
