Preparation
- Start by washing the baby potatoes and cutting them in half. Mince the garlic and set aside.
Cooking
- Place the halved potatoes at the bottom of your crockpot. Next, add the chicken breasts on top of the potatoes.
- In a bowl, mix together the chicken broth, minced garlic, grated Parmesan cheese, Italian seasoning, salt, and pepper. Pour this flavorful mixture over the chicken and potatoes.
- Turn your crockpot on to low heat and cover it. Let it cook for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and cooked through.
- Once cooked, garnish with freshly chopped parsley before serving. Enjoy with your favorite side dishes or salad!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat in the microwave or on stovetop with a splash of chicken broth.
