- In a large bowl, combine chicken pieces, black pepper, salt, garlic powder, onion powder, ginger paste, and soy sauce. Mix well and let it marinate for at least 10 minutes.
Cooking
- Heat the vegetable oil over medium-high heat in a large skillet or wok until hot.
- Add the marinated chicken to the skillet in a single layer. Cook for about 5-7 minutes without stirring.
- Once golden, stir occasionally until the chicken is fully cooked and no longer pink in the center.
- Add the onion and bell pepper slices and stir-fry for an additional 3-4 minutes or until the vegetables are tender-crisp.
- Remove from heat, garnish with chopped cilantro, and serve hot with rice or flatbreads.
Notes
Marinate chicken ahead of time for enhanced flavor. For a vegetarian version, swap chicken for tofu or paneer and adjust soy sauce for flavor. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months.
