Ingredients
  

For the marinade
  • 1 pound chicken breast, cut into bite-sized pieces
  • 2 tablespoons black pepper, freshly ground, adjust to taste Adjust the amount based on desired spice level.
  • 1 teaspoon salt
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon ginger paste
  • 2 tablespoons soy sauce (ensure it's Halal)
For the stir-fry
  • 1 medium onion, sliced
  • 1 bell pepper, sliced (any color)
  • 2 tablespoons vegetable oil (or any preferred cooking oil)
  • to taste chopped cilantro, for garnish (optional)

Method
 

Preparation
  1. In a large bowl, combine chicken pieces, black pepper, salt, garlic powder, onion powder, ginger paste, and soy sauce. Mix well and let it marinate for at least 10 minutes.
Cooking
  1. Heat the vegetable oil over medium-high heat in a large skillet or wok until hot.
  2. Add the marinated chicken to the skillet in a single layer. Cook for about 5-7 minutes without stirring.
  3. Once golden, stir occasionally until the chicken is fully cooked and no longer pink in the center.
  4. Add the onion and bell pepper slices and stir-fry for an additional 3-4 minutes or until the vegetables are tender-crisp.
  5. Remove from heat, garnish with chopped cilantro, and serve hot with rice or flatbreads.

Notes

Marinate chicken ahead of time for enhanced flavor. For a vegetarian version, swap chicken for tofu or paneer and adjust soy sauce for flavor. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months.
