Ingredients
  

Wet Ingredients
  • 1 cup creamy peanut butter
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
Dry Ingredients
  • 1 cup rolled oats
  • 0.5 tsp baking soda
  • 1 pinch salt
Mix-ins
  • 0.5 cup chocolate chips (semi-sweet or dark)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the creamy peanut butter, brown sugar, and egg. Mix until well-blended.
  3. Stir in the rolled oats, baking soda, vanilla extract, and a pinch of salt until everything is combined.
  4. Fold in the chocolate chips gently.
  5. Using a tablespoon or cookie scoop, drop rounded portions of cookie dough onto the prepared baking sheet, leaving space in between cookies.
Baking
  1. Bake for 12-15 minutes or until edges are lightly golden and centers appear set.
  2. Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. For a thicker cookie, refrigerate the dough for 30 minutes before baking.
