Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the creamy peanut butter, brown sugar, and egg. Mix until well-blended.
- Stir in the rolled oats, baking soda, vanilla extract, and a pinch of salt until everything is combined.
- Fold in the chocolate chips gently.
- Using a tablespoon or cookie scoop, drop rounded portions of cookie dough onto the prepared baking sheet, leaving space in between cookies.
Baking
- Bake for 12-15 minutes or until edges are lightly golden and centers appear set.
- Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. For a thicker cookie, refrigerate the dough for 30 minutes before baking.
