- In a large mixing bowl, combine the rolled oats, peanut butter, honey or maple syrup, vanilla extract, and a pinch of salt. If you're adding chocolate chips, this is the time to toss them in too!
- Use a spatula or your hands to mix the ingredients until they're well combined and form a sticky dough.
- Line a muffin tin with paper liners or lightly grease each cup to prevent sticking.
- Divide the mixture evenly among the muffin cups, pressing it down firmly to ensure they hold their shape after setting.
- Place the muffin tin in the refrigerator for about 30 minutes to an hour or until the cups are firm.
- Once set, pop them out of the tin, and enjoy as a delicious snack!
Notes
Store in an airtight container in the fridge for up to one week or freeze in a freezer-safe container for up to three months. Thaw at room temperature or microwave for a few seconds before enjoying.
