  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate chips (optional) You can also use dried fruits like cranberries or raisins.
  • 1/2 teaspoon vanilla extract
  • a pinch salt

Method
 

Preparation
  1. In a large mixing bowl, combine the rolled oats, peanut butter, honey or maple syrup, vanilla extract, and a pinch of salt. If you're adding chocolate chips, this is the time to toss them in too!
  2. Use a spatula or your hands to mix the ingredients until they're well combined and form a sticky dough.
  3. Line a muffin tin with paper liners or lightly grease each cup to prevent sticking.
  4. Divide the mixture evenly among the muffin cups, pressing it down firmly to ensure they hold their shape after setting.
  5. Place the muffin tin in the refrigerator for about 30 minutes to an hour or until the cups are firm.
  6. Once set, pop them out of the tin, and enjoy as a delicious snack!

Notes

Store in an airtight container in the fridge for up to one week or freeze in a freezer-safe container for up to three months. Thaw at room temperature or microwave for a few seconds before enjoying.
