- In a mixing bowl, combine the softened unsalted butter and peanut butter until creamy.
- Add in the powdered sugar and vanilla extract. Mix until you achieve a smooth and fluffy consistency.
- Scoop out small portions of the dough and shape them into small balls or squares.
- Place your shaped meltaways onto a parchment-lined tray and pop them in the fridge for about 30 minutes.
- If using chocolate, melt the chocolate chips in a microwave-safe bowl in 30-second intervals until smooth.
- Dip each meltaway into the melted chocolate and return them to the tray. Sprinkle with crushed nuts or coconut for added flair.
- Place them back in the fridge for another hour until the chocolate has set completely.
- Once fully chilled, serve your Peanut Butter Meltaways or store in an airtight container.
Notes
Store in an airtight container in the refrigerator for up to one week or freeze for up to three months. Let come to room temperature before enjoying or reheat briefly in the microwave to soften.
