  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or chopped nuts Optional for added flavor

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the peanut butter, mashed banana, brown sugar, and granulated sugar. Mix until smooth.
  3. Add the vanilla extract and the egg, mixing until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips or nuts, if using.
  6. Scoop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden.
  2. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For softer cookies, don’t overbake. Use an airtight container to maintain freshness. Leftovers can be frozen for future enjoyment.
