Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the peanut butter, mashed banana, brown sugar, and granulated sugar. Mix until smooth.
- Add the vanilla extract and the egg, mixing until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips or nuts, if using.
- Scoop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For softer cookies, don’t overbake. Use an airtight container to maintain freshness. Leftovers can be frozen for future enjoyment.
