Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the peanut butter and sugar. Use a wooden spoon or a hand mixer to blend until smooth.
- Beat in the egg, vanilla extract, baking powder, and salt. Mix until well incorporated.
- Using a tablespoon, scoop out the dough and roll it into balls. Place them on a lined baking sheet, spacing them about 2-3 inches apart.
- Using your thumb or the back of a measuring spoon, press down in the center of each cookie ball to create a small well.
- Spoon a small amount of jelly into each well. Be careful not to overfill, as the jelly may leak out while baking.
- Bake for 10-12 minutes until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months. Warm them up in the microwave for a fresh-out-of-the-oven taste.
