Ingredients
  

For the Cookie Dough
  • 1 cup creamy peanut butter Ensure it's halal-friendly.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ½ teaspoon salt
For the Filling
  • ½ cup jelly or fruit spread Your choice of flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the peanut butter and sugar. Use a wooden spoon or a hand mixer to blend until smooth.
  3. Beat in the egg, vanilla extract, baking powder, and salt. Mix until well incorporated.
  4. Using a tablespoon, scoop out the dough and roll it into balls. Place them on a lined baking sheet, spacing them about 2-3 inches apart.
  5. Using your thumb or the back of a measuring spoon, press down in the center of each cookie ball to create a small well.
  6. Spoon a small amount of jelly into each well. Be careful not to overfill, as the jelly may leak out while baking.
  7. Bake for 10-12 minutes until the edges are golden brown.
  8. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months. Warm them up in the microwave for a fresh-out-of-the-oven taste.
