Preparation
  1. In a mixing bowl, beat the heavy cream until it begins to thicken. Gradually add the sugar and vanilla extract, continuing to whip until soft peaks form.
  2. In a separate bowl, toss the sliced peaches with cornstarch and lemon juice.
  3. Gently fold the peach mixture into the whipped cream mixture.
  4. Spoon the peach and cream mixture into your pre-baked pie crust, spreading it evenly.
  5. Place your pie in the fridge for at least 2 hours (or overnight for best results).
  6. Once chilled, slice the pie and serve it up with fresh mint leaves or whipped cream for an extra touch.

Notes

Consider adding a drizzle of honey or a sprinkle of cinnamon for extra flair. Avoid using overly ripe or mushy peaches, as they can make the filling watery. Store in the refrigerator covered for up to 3-4 days, or freeze slices in an airtight container for up to a month.
