Preparation
- Peel and pit the ripe peaches, then cut them into smaller pieces and place them in a blender or food processor.
Blending
- Add sugar, lemon juice, and a pinch of salt to the peaches in the blender. Blend until completely smooth.
- Taste the mixture. If desired, add more sugar and blend again.
Freezing
- Pour the peach mixture into a shallow dish, spreading it out evenly. Freeze for about 2 to 4 hours, until solid.
Serving
- Once frozen, break up the sorbet with a fork to create a scoopable consistency. Serve in bowls or cones.
Notes
Store any leftovers in an airtight container in the freezer for 1 to 2 weeks. Let it sit for 5 to 10 minutes before serving to soften slightly.
