  • 4 pieces ripe peaches, peeled and pitted Use ripe, juicy peaches for the best flavor.
  • 3/4 cup sugar Adjust to taste depending on peach sweetness.
  • 2 tablespoons lemon juice
  • 1 pinch salt

Method
 

Preparation
  1. Peel and pit the ripe peaches, then cut them into smaller pieces and place them in a blender or food processor.
Blending
  1. Add sugar, lemon juice, and a pinch of salt to the peaches in the blender. Blend until completely smooth.
  2. Taste the mixture. If desired, add more sugar and blend again.
Freezing
  1. Pour the peach mixture into a shallow dish, spreading it out evenly. Freeze for about 2 to 4 hours, until solid.
Serving
  1. Once frozen, break up the sorbet with a fork to create a scoopable consistency. Serve in bowls or cones.

Notes

Store any leftovers in an airtight container in the freezer for 1 to 2 weeks. Let it sit for 5 to 10 minutes before serving to soften slightly.
