  • 400 g canned peaches, drained (or fresh peaches, sliced)
  • 1 cup self-raising flour
  • 1 cup milk
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar
  • 1 1/2 cups boiling water
  • 1/4 tsp salt

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F) and grease a suitable baking dish.
  2. Spread the drained peaches evenly in the bottom of the prepared baking dish.
  3. In a large mixing bowl, combine the self-raising flour, sugar, and salt.
  4. Stir in the milk, melted butter, and vanilla extract until well combined. The mixture should be smooth.
  5. Pour the batter over the peaches in the dish. Don't worry if it looks uneven; it will come together perfectly.
  6. In a separate bowl, combine the brown sugar and boiling water. Carefully pour this over the batter in the baking dish without stirring.
  7. Place the dish in the preheated oven and bake for 30-35 minutes until the top is golden and the pudding is set.
  8. Allow it to cool slightly, then serve warm, preferably with a scoop of ice cream or a drizzle of cream.

Notes

If using fresh peaches, ensure they are ripe for the best flavor. Customize with almond extract or cinnamon as desired. Avoid overmixing to prevent a dense pudding. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
