Preparation
- Preheat your oven to 180°C (350°F) and grease a suitable baking dish.
- Spread the drained peaches evenly in the bottom of the prepared baking dish.
- In a large mixing bowl, combine the self-raising flour, sugar, and salt.
- Stir in the milk, melted butter, and vanilla extract until well combined. The mixture should be smooth.
- Pour the batter over the peaches in the dish. Don't worry if it looks uneven; it will come together perfectly.
- In a separate bowl, combine the brown sugar and boiling water. Carefully pour this over the batter in the baking dish without stirring.
- Place the dish in the preheated oven and bake for 30-35 minutes until the top is golden and the pudding is set.
- Allow it to cool slightly, then serve warm, preferably with a scoop of ice cream or a drizzle of cream.
Notes
If using fresh peaches, ensure they are ripe for the best flavor. Customize with almond extract or cinnamon as desired. Avoid overmixing to prevent a dense pudding. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
