Preparation
- Combine the flour, sugar, and salt in a mixing bowl.
- Add the chilled, diced butter and mix until the mixture resembles coarse crumbs.
- Gradually add cold water, mixing until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for about 15-20 minutes.
Baking
- Preheat your oven to 375°F (190°C).
- Once chilled, roll out the dough on a floured surface to about 1/8-inch thickness.
- Cut rectangles measuring approximately 3x4 inches.
- On half of the rectangles, spoon about 1 tablespoon of the peach filling, leaving a small border around the edge.
- Whisk the egg and brush it along the edges of the rectangles.
- Place another rectangle on top and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
- Place the filled pastries on a baking sheet lined with parchment paper.
- Brush the top with the remaining egg mixture.
- Bake for 20-25 minutes or until golden brown.

- Once cooled, drizzle with powdered sugar icing for a sweet finish.
Notes
For a vegan alternative, consider using coconut oil instead of butter and a flax egg for the egg wash. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze uncooked and bake from frozen.
