Ingredients

Pastry Dough
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/4 cup cold water
  • 1 each egg (for egg wash)
Filling and Topping
  • 1 cup peach filling (homemade or store-bought, ensure Halal compliance)
  • Powdered sugar for icing

Method

Preparation
  1. Combine the flour, sugar, and salt in a mixing bowl.
  2. Add the chilled, diced butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add cold water, mixing until a dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for about 15-20 minutes.
Baking
  1. Preheat your oven to 375°F (190°C).
  2. Once chilled, roll out the dough on a floured surface to about 1/8-inch thickness.
  3. Cut rectangles measuring approximately 3x4 inches.
  4. On half of the rectangles, spoon about 1 tablespoon of the peach filling, leaving a small border around the edge.
  5. Whisk the egg and brush it along the edges of the rectangles.
  6. Place another rectangle on top and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
  7. Place the filled pastries on a baking sheet lined with parchment paper.
  8. Brush the top with the remaining egg mixture.
  9. Bake for 20-25 minutes or until golden brown.
Finishing Touch
  1. Once cooled, drizzle with powdered sugar icing for a sweet finish.

Notes

For a vegan alternative, consider using coconut oil instead of butter and a flax egg for the egg wash. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze uncooked and bake from frozen.
