Preparation
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, combine the sliced peaches, granulated sugar, cornstarch, vanilla extract, lemon juice, and cinnamon. Stir gently until well coated.
- If using a store-bought crust, roll it out into a 9-inch pie dish. For a homemade crust, prepare it according to your favorite recipe.
Assembly
- Pour the peach filling into the prepared pie crust, spreading evenly. Dot the top with small pieces of butter.
- If you have extra pie crust, create a lattice pattern on top or leave it open-faced.
Baking
- Place the pie in the preheated oven and bake for 40-45 minutes or until the crust is golden and the filling is bubbly.
Cooling
- Remove the pie from the oven and let it cool on a wire rack for at least 30 minutes before serving.
Notes
Top with homemade whipped cream or ice cream for an extra treat. Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
