Ingredients
  

For the Filling
  • 2 cups fresh peaches, sliced (about 4-5 medium peaches) Use ripe, in-season peaches for the best flavor.
  • 1/4 cup granulated sugar Adjust based on the sweetness of peaches.
  • 1 teaspoon cinnamon (optional) Optional for added warmth.
  • 1 tablespoon cornstarch Acts as a thickener for the filling.
  • 1 tablespoon lemon juice Adds brightness to the filling.
For the Crust
  • 1 whole pre-made pie crust or homemade pastry dough Roll out to a 12-inch circle.
  • 1 each egg For egg wash to brush over the crust.
  • Pinch salt

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. If using pre-made dough, roll it out on a floured surface to a 12-inch circle. If making homemade dough, roll it out similarly.
  3. In a bowl, combine the sliced peaches, sugar, cinnamon, cornstarch, and lemon juice. Gently toss to coat the peaches evenly.
Assembly
  1. Place the peach mixture in the center of the rolled-out dough, leaving about a 2-inch border. Fold the edges over the peaches, making pleats as you go.
  2. Beat the egg and brush it over the folded crust for a lovely golden finish.
Baking
  1. Place the galette in the oven and bake for 30-35 minutes, or until the crust is golden brown and the peaches are bubbly.
  2. Let the galette cool for a few minutes before slicing. Serve it warm, perhaps with a scoop of ice cream!

Notes

Serve with whipped cream or vanilla ice cream. Store leftovers in an airtight container in the fridge for up to 3-4 days.
