Preparation
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- If using pre-made dough, roll it out on a floured surface to a 12-inch circle. If making homemade dough, roll it out similarly.
- In a bowl, combine the sliced peaches, sugar, cinnamon, cornstarch, and lemon juice. Gently toss to coat the peaches evenly.
Assembly
- Place the peach mixture in the center of the rolled-out dough, leaving about a 2-inch border. Fold the edges over the peaches, making pleats as you go.
- Beat the egg and brush it over the folded crust for a lovely golden finish.
Baking
- Place the galette in the oven and bake for 30-35 minutes, or until the crust is golden brown and the peaches are bubbly.
- Let the galette cool for a few minutes before slicing. Serve it warm, perhaps with a scoop of ice cream!
Notes
Serve with whipped cream or vanilla ice cream. Store leftovers in an airtight container in the fridge for up to 3-4 days.
