Ingredients

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 large egg, beaten
Main Ingredients
  • 2 cups peaches, diced fresh or canned, ensure they’re Halal

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with muffin liners.
  2. In a mixing bowl, combine the flour, sugar, baking powder, cinnamon, and salt. Mix well.
  3. In another bowl, whisk together melted butter, milk, and beaten egg until blended.
  4. Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  5. Gently fold in the diced peaches.
  6. Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
Baking
  1. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  2. Let the muffins cool in the tin for a few minutes before transferring to a wire rack.
  3. Enjoy warm or at room temperature!

Notes

Store in an airtight container at room temperature for up to 2 days. Freeze for up to three months in a tightly wrapped plastic bag. Reheat in the microwave for 10-15 seconds before serving.
