Preparation
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×13 inch baking dish or line it with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat the softened butter and granulated sugar together until fluffy and pale.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry mixture to the butter mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
- Gently fold in the diced peaches to the batter.
- Pour the batter into the prepared baking dish, smoothing out the top.
Baking
- Bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted in the center comes out clean.
Making the Frosting
- In a saucepan over medium heat, combine brown sugar, heavy cream, and butter. Stir until dissolved and bring to a gentle boil, then reduce heat and simmer for a couple of minutes.
- Remove from heat and let the frosting cool slightly before spreading it on the cooled cake.
Serving
- Slice into squares, serve with a dollop of whipped cream if desired, and enjoy your delicious creation!
Notes
For best results, allow the cake to cool completely before frosting. Store in an airtight container in the refrigerator for 4-5 days or freeze for longer storage. Reheat slices in the microwave for about 15-20 seconds.
