Ingredients
  

For the Tart
  • 2 cups sliced fresh peaches
  • 1 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar for the tart
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • Powdered sugar for dusting for serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine 1/2 cup of softened unsalted butter and 1/2 cup of sugar. Beat until light and fluffy. Add in the eggs one at a time, mixing well after each addition.
  3. Gradually blend in the almond flour, all-purpose flour, salt, vanilla extract, and almond extract. Stir until just combined, forming a creamy batter.
Baking
  1. Pour the batter into a greased tart pan or springform pan. Arrange the sliced peaches beautifully on top, pressing them gently into the batter.
  2. Place the tart in the preheated oven and bake for 35-40 minutes or until golden brown and a toothpick comes out clean.
Serving
  1. Allow the tart to cool for a few minutes, then dust with powdered sugar before serving. Enjoy on its own or serve with a scoop of your favorite ice cream!

Notes

If you don’t have almond flour, you can swap it for ground pistachios or hazelnuts for a unique twist!
