Preparation
- Preheat your oven to 375°F (190°C).
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
- In a large mixing bowl, cream together the softened butter, sugar, egg, vanilla extract, and almond extract until light and fluffy.
- Gradually add the dry ingredients to the wet mixture, mixing until well combined.
- Divide the dough into separate bowls and add a few drops of pastel food coloring to each. Mix until you achieve your desired hues.
- Roll the dough into balls and place them on ungreased baking sheets. Flatten them slightly with the bottom of a glass.
Baking and Assembly
- Bake for 8 to 10 minutes, until they are slightly golden around the edges. Allow them to cool on a wire rack.
- Once cooled, spread your favorite frosting onto the flat side of one cookie and top with another, creating a delightful sandwich.
