Ingredients
  

For the Cookies
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 ½ cups white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ½ teaspoon salt
  • as needed Pastel food coloring For coloring the dough

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In a large mixing bowl, cream together the softened butter, sugar, egg, vanilla extract, and almond extract until light and fluffy.
  4. Gradually add the dry ingredients to the wet mixture, mixing until well combined.
  5. Divide the dough into separate bowls and add a few drops of pastel food coloring to each. Mix until you achieve your desired hues.
  6. Roll the dough into balls and place them on ungreased baking sheets. Flatten them slightly with the bottom of a glass.
Baking and Assembly
  1. Bake for 8 to 10 minutes, until they are slightly golden around the edges. Allow them to cool on a wire rack.
  2. Once cooled, spread your favorite frosting onto the flat side of one cookie and top with another, creating a delightful sandwich.

Notes

Don’t overmix the dough and chill it if too soft. Use a cookie scoop for uniform sizes.
