Preparation
- Preheat the oven to 350°F (175°C) and line a cupcake tin with cupcake liners.
- In a bowl, whisk together the all-purpose flour and baking powder.
- In a separate bowl, beat together the softened butter and sugar until light and fluffy.
- Mix in the eggs, one at a time, followed by the vanilla extract. Beat until well combined.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the flour mixture; mix until just combined.
- Divide the batter into separate bowls and add different food coloring to achieve your desired pastel shades.
- Using a spoon or a scooper, fill each cupcake liner about halfway with batter.
Baking
- Place the tray in the oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool in the tin for about 5 minutes, then transfer them to wire racks to cool completely.
Decorating
- Once cooled, pipe your favorite frosting on top of each cupcake and add sprinkles for decoration.
Notes
Store cupcakes in an airtight container at room temperature for up to 3 days. Refrigerate for up to a week or freeze for up to 3 months. Reheat briefly in the microwave to restore softness.
