Preparation
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a greased springform pan.
- Bake the crust for about 10 minutes and let it cool while preparing the filling.
- In a large mixing bowl, beat the softened cream cheese until smooth, and mix in the sugar.
- Add the eggs one by one, mixing on low speed until just combined. Avoid overmixing!
- Gently fold in the sour cream, passion fruit puree, and vanilla extract until well integrated.
- Pour the filling over the cooled crust and bake for 50-60 minutes or until the edges are set but the center jiggles slightly.
- Once baked, turn off the oven and let the cheesecake cool inside for 1 hour.
- After an hour, let it cool to room temperature, then refrigerate for at least 4 hours or preferably overnight.
Notes
Store in the refrigerator for up to 5 days or freeze slices for up to 2 months. Thaw in the refrigerator overnight before serving. For variation, consider substituting passion fruit puree with mango or guava.
