  • 1 medium head cauliflower (approximately 1.5 pounds)
  • 1 cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley or basil (for garnish, optional)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Rinse the cauliflower and pat it dry. Cut it into bite-sized florets.
  3. In a large mixing bowl, combine the florets, olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss well.
  4. Sprinkle the grated Parmesan cheese over the seasoned cauliflower and toss again.
Cooking
  1. Spread the cauliflower evenly on a baking sheet lined with parchment paper.
  2. Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy.
Serving
  1. Let it cool for about 5 minutes, then garnish with fresh parsley or basil, if desired. Serve hot.

Notes

For a lighter cheese alternative, try nutritional yeast. Avoid overcrowding the baking sheet for crispy results. Store leftovers in an airtight container for up to 3 days, or freeze for about a month.
