Preparation
- Preheat your oven to 425°F (220°C).
- Peel and cut your carrots into sticks, ensuring they are roughly the same size for even cooking.
- In a large mixing bowl, combine the chopped carrot sticks with olive oil, salt, pepper, and garlic powder. Toss until they are evenly coated.
Roasting
- Spread the carrots out on a baking sheet in a single layer, making sure not to overcrowd them.
- Roast in the preheated oven for about 20 minutes.
- Remove the carrots from the oven and sprinkle the grated Parmesan cheese over the top.
- Return to the oven for an additional 10 minutes, or until the cheese is golden and crispy.

- Once out of the oven, garnish with fresh parsley if desired. Serve immediately and enjoy!
