  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • Fresh parsley, chopped (optional) For garnish

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut your carrots into sticks, ensuring they are roughly the same size for even cooking.
  3. In a large mixing bowl, combine the chopped carrot sticks with olive oil, salt, pepper, and garlic powder. Toss until they are evenly coated.
Roasting
  1. Spread the carrots out on a baking sheet in a single layer, making sure not to overcrowd them.
  2. Roast in the preheated oven for about 20 minutes.
  3. Remove the carrots from the oven and sprinkle the grated Parmesan cheese over the top.
  4. Return to the oven for an additional 10 minutes, or until the cheese is golden and crispy.
Serving
  1. Once out of the oven, garnish with fresh parsley if desired. Serve immediately and enjoy!

Notes

For perfect results, ensure your carrots are cut uniformly and avoid overcrowding them on the baking sheet. Leftovers can be stored in an airtight container for up to 3 days.
