  • 2 lbs baby potatoes Wash thoroughly.
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. If using baby potatoes, leave the skins on for texture. Cut larger potatoes into halves or quarters.
  3. In a large mixing bowl, combine olive oil, garlic powder, paprika, salt, and pepper. Toss in the potatoes until well coated.
  4. Sprinkle the grated Parmesan cheese over the potatoes and gently mix to coat.
  5. Spread the coated potatoes on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.
  6. Once done, sprinkle with chopped fresh parsley before serving.

Notes

Tips: Add Italian herbs for flavor variations. Keep an eye on baking time as it may vary by oven type. For extra crispiness, broil for a few minutes at the end. Store leftovers in an airtight container in the refrigerator for up to 3 days.
