- If using baby potatoes, leave the skins on for texture. Cut larger potatoes into halves or quarters.
- In a large mixing bowl, combine olive oil, garlic powder, paprika, salt, and pepper. Toss in the potatoes until well coated.
- Sprinkle the grated Parmesan cheese over the potatoes and gently mix to coat.
- Spread the coated potatoes on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.
- Once done, sprinkle with chopped fresh parsley before serving.
