Pancake Sausage Bites are a fun, bite-sized twist on classic pancakes and sausage. These fluffy mini pancake bites are stuffed with savory breakfast sausage and baked or pan-fried to golden perfection.

Ingredients

Instructions
 

  • **Prepare the Sausage**
  • - Cook the sausage links in a skillet over medium heat until browned and fully cooked (about 8-10 minutes).
  • - Let cool slightly, then cut into small bite-sized pieces.
  • **Make the Pancake Batter**
  • - In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  • - In a separate bowl, whisk together the buttermilk, egg, melted butter, vanilla, and maple syrup (if using).
  • - Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
  • **Choose Your Cooking Method**
  • **Mini Muffin Tin Method (Easiest!)**
  • - Preheat oven to 375°F (190°C) and grease a mini muffin tin.
  • - Fill each muffin cup about halfway with pancake batter.
  • - Place a piece of sausage in the center of each cup.

  • **Skillet/Griddle Method (Traditional Pancakes)**
