  • 1 pound baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh rosemary or thyme (for garnish, optional)

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the halved baby potatoes and sliced smoked sausage.
  3. Drizzle with olive oil and season with garlic powder, onion powder, smoked paprika, salt, and pepper. Toss everything together until evenly coated.
  4. Spread the sausage and potato mixture in a single layer on a baking sheet lined with parchment paper.
  5. Place the baking sheet in the oven and roast for 25-30 minutes, or until the potatoes are tender and golden, and the sausage has crispy edges. Toss halfway through for even roasting.
  6. Garnish with fresh rosemary or thyme if desired, and serve while hot.

Notes

For a twist, feel free to swap sausage types, and avoid crowding the baking sheet for optimal crispiness. Store leftovers in the refrigerator for 3 to 4 days, or freeze for up to 3 months.
