  • 2 medium medium zucchinis Fresh and firm zucchinis are recommended.
  • 3 tablespoons olive oil Can be substituted with avocado oil for a healthier choice.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1/4 cup Parmesan cheese Optional; can be replaced with a plant-based alternative for a vegan option.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the zucchinis. Cut them horizontally into quarter-inch thick slices.
  3. In a large mixing bowl, toss the zucchini slices with olive oil, salt, pepper, and garlic powder until well coated. If using Parmesan cheese, add it here too.
  4. Lay the seasoned zucchini slices in a single layer on a baking sheet lined with parchment paper.
Baking
  1. Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the zucchini is golden brown and crispy.
  2. Keep an eye on them during the last few minutes to avoid burning.
Serving
  1. Once baked, remove from the oven and let them cool for a couple of minutes before serving.

Notes

For the perfect zucchini, ensure they are spread out on the baking sheet to avoid steaming. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
