  • 1 medium to large zucchini cut into 1/4-inch disks
  • 1 tablespoon olive oil
  • 1/2 cup Panko breadcrumbs
  • 1/3 cup Locatelli Pecorino Romano or any Pecorino Romano
  • 2 eggs beaten
  • 1/2 cup flour
  • Salt & pepper to taste

  • Preheat & Prep: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  • Set Up Breading Stations: Prepare three shallow dishes:
  • In the first dish, mix flour, salt, and pepper.
  • In the second dish, beat the eggs.
  • In the third dish, combine Panko breadcrumbs and grated Pecorino Romano cheese.
  • Bread the Zucchini Chips: Start by dipping each zucchini disk into the flour mixture, shaking off any excess. Next, coat it in the beaten eggs. Finally, press it into the Panko-Pecorino mixture, ensuring an even coating of the breadcrumbs.
