  • 4 pieces chicken breasts Ensure they are thawed and patted dry
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese (mozzarella or cheddar) Adjust cheese type based on preference
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • Fresh herbs (optional for garnish)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the chicken breasts, olive oil, garlic powder, onion powder, salt, and pepper. Coat the chicken evenly and set it aside.
  3. In a skillet, lightly sauté the sliced mushrooms over medium heat until softened, about 5 minutes, then set them aside.
Cooking
  1. In a baking dish, lay the seasoned chicken breasts side by side. Top each piece with the sautéed mushrooms and a generous sprinkle of cheese.
  2. Place the baking dish in your preheated oven and bake for approximately 25-30 minutes or until the chicken is cooked through and the cheese is bubbly and golden.
Serving
  1. Once done, garnish with fresh herbs if using, and serve hot with your favorite sides.

Notes

Top Tips: You can substitute chicken thighs or turkey for the chicken breasts. Keep a close eye on the chicken while it bakes and use a meat thermometer to ensure the internal temperature reaches 165°F (75°C). Avoid overcrowding the baking dish.
