  • 3 cloves garlic (minced)
  • 1/4 cup capers (drained)
  • 2 pieces lemons (juiced) Juice of 2 lemons
  • Salt (to taste)
  • Black pepper (to taste)
  • Chopped parsley (for garnish)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry and season both sides generously with salt and pepper.
  3. In a bowl, mix together olive oil, minced garlic, capers, and the juice of one lemon.
  4. Place the seasoned chicken thighs in a baking dish and pour the garlic-caper mixture over the chicken.
Cooking
  1. Place the dish in the oven and bake for 30-35 minutes, or until the chicken is cooked through and the skin is crispy.
  2. Once out of the oven, drizzle with the remaining lemon juice and garnish with fresh parsley. Enjoy!
