Ingredients
  

For the Beet Fries
  • 4 medium medium-sized beets, peeled and cut into fry shapes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
For the Spicy Aioli
  • 1/2 cup mayonnaise Can be substituted with Greek yogurt for a healthier version.
  • 1 tablespoon Sriracha or your preferred hot sauce Adjust according to your spice preference.
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Peel and slice the beets into equal-sized fry shapes and place them in a large mixing bowl.
  3. Drizzle olive oil over the sliced beets and sprinkle with salt, pepper, garlic powder, and paprika. Toss until well-coated.
Baking
  1. Arrange the seasoned beet fries in a single layer on a parchment-lined baking sheet.
  2. Bake for 25-30 minutes, flipping halfway through, until tender and slightly caramelized.
Making the Aioli
  1. While the fries are baking, mix mayonnaise, Sriracha, and lemon juice in a small bowl.
Serving
  1. Once the beet fries are crispy, serve them hot with the spicy aioli.

Notes

Watch out for oven temperature variations to avoid burning. Store leftovers in an airtight container for up to 3 days. Reheat in the oven for the best texture.
