  • 2 large yellow onions, thinly sliced
  • 4 cups beef broth (preferably low sodium) High-quality broth recommended
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • 1 cup mozzarella cheese, shredded For topping
  • ½ cup provolone cheese, shredded For topping

Preparation
  1. Heat olive oil in a large pot over medium heat. Add the sliced onions, a pinch of salt, and cook, stirring occasionally, for about 15-20 minutes until the onions are caramelized and golden brown.
  2. Pour in the beef broth and add Worcestershire sauce and thyme. Stir well and let the soup simmer for 10 more minutes. Taste and season with salt and pepper if needed.
  3. Preheat your oven's broiler. Ladle the hot soup into oven-safe bowls. Top with a generous amount of mozzarella and provolone cheese.
  4. Place the bowls on a baking sheet and broil them for about 2-3 minutes, watching carefully until the cheese is bubbly and golden brown.
  5. Remove from the oven, let cool slightly, and enjoy this cozy soup with crusty French bread or croutons for dipping!

Notes

Caramelization of the onions is key for sweetness. Use high-quality beef broth for best flavor. You can experiment with different cheeses like Gruyère or Parmesan. Leftovers can be stored and reheated easily or even used in casseroles.
